The Capitán is a classic Peruvian drink, dating back to Puno in the 1920s. There, Peruvian military captains used to visit the canteens after their nightly rounds, to request their favorite combination: pisco and vermouth.
What you’ll need
2 1/2 ounces pure Pisco Quebranta
2 ounces rosso vermouth
2 drops classic Angostura bitters
Preparation

Place 5 or 7 ice cubes in the shaker.

Add the pisco, vermouth and two drops of Angostura bitters.

Shake the preparation for about 30 seconds (to lightly cool it).

Serve in a martini glass.

Aromatize the cocktail with orange oil.

Garnish it with green olives or chives, as desired.
